Creamy Apple, Celery and Fennel Slaw
Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.

Ingredients:

  • 2 tablespoons Vinegar (Cider)
  • 2 tablespoons Tarragon leaves
  • 1/16 pinch Stevia
  • 1 tablespoon Extra Virgin Olive Oil
  • 2 tablespoons Real Mayonnaise
  • 1/2 fluid ounce Fresh Lemon Juice
  • 1 bulb Fennel Bulk
  • 3 stalk large (11"-12" long) Celery
  • 1 medium (2-3/4" dia) (approx 3 per lb) Pink Lady Apples

Directions:

Use Pink Lady, Fugi or another crisp apple for this recipe.  The stevia is optional depending upon how sweet you like your slaw; it is recommended to taste the dressing before adding the stevia to decide then add only very small amounts tasting as you go.
  1. In a small bowl whisk together the mayonnaise, cider vinegar, olive oil, tarragon and a pinch of stevia (optional); set aside.  
  2. Julienne the apple, toss with the lemon juice and place in a large bowl. Slice the celery and fennel and add to the bowl.  Toss to coat with dressing and transfer to a serving bowl.  Best eaten immediately.  1 serving = 3/4 cup.
