Ingredients:
- 1 fluid ounce Fresh Lime Juice
- 2 cloves Garlic
- 1 tablespoon Salt
- 1/2 teaspoon Black Pepper
- 2 2/3 ounces Cilantro (Coriander)
- 2 1/2 teaspoons Fresh Lemon Juice
- 2 pounds Pork Loin (Tenderloin, Lean Only)
- 1 1/2 tablespoons Canola Vegetable Oil
- 2 tablespoons chopped Chipotle Peppers in Adobo Sauce
- 1 1/2 teaspoons Sucralose Based Sweetener (Sugar Substitute)
- 2 tablespoons Cumin
- 1/3 cup chopped English Walnuts
Directions:
- Heat grill pan or outdoor grill to medium-high. Combine chipotles, lemon juice, lime juice, garlic (minced) and sugar substitute in a blender; purée.
- Rub pork with cumin, oil, salt and pepper. Grill 18 to 20 minutes, rolling the meat every 3 to 4 minutes to ensure even cooking. Rest on cutting board 5 minutes.
- Combine cilantro and walnuts in a small bowl. Cut pork into 1/2-inch slices, drizzle with sauce, sprinkle with cilantro mixture and serve.
