Ingredients:
- 1 dash Salt
- 1/2 teaspoon Onion Powder
- 2 tablespoons Olive Oil
- 1/2 teaspoon Garlic Powder
- 1/4 cup, crumbled, not packed Blue Cheese
- 1 teaspoon Dill (Dried)
- 2 tablespoons Chili Powder
- 1/2 teaspoon Black Pepper
- 1/4 cup Real Mayonnaise
- 1/2 cup Sour Cream
- 1/4 fluid ounce Lemon Juice
- 1 /4 cup Organic High Fiber Coconut Flour
- 32 ounces raw Chicken Breast
- 1/3 tablespoon Chives (Freeze Dried)
- 1/2 teaspoon Garlic Powder
Directions:
For this recipe use chipotle powder in place of the chili powder.
- Preheat oven to 400°F.
- Combine first 5 ingredients (coconut flour through salt) in medium mixing bowl. Cut chicken breast into cubes and toss to coat with the coconut flour mixture.
- Heat oil over medium heat in a large cast iron or oven proof skillet. Add the chicken cubes and brown for 4 minutes, turn over and place skillet in preheated oven. Bake for 5 minutes or until cooked through.
- Skewer and serve with Creamy Blue Cheese Dipping Sauce.
For the Creamy Blue Cheese Dipping Sauce:
- Whisk the sour cream, mayonnaise, lemon juice, dill, chives, garlic powder, and black pepper together until fluffy.
- Stir in blue cheese.
