Keto Chicken with Tomatoes and Capers

Ingredients:

  • 1 teaspoon Garlic
  • 3 plum tomatoes Red Tomatoes
  • 1/2 cup Chicken Broth, Bouillon or Consomme
  • 1/4 cup chopped Scallions or Spring Onions
  • 2 tablespoons drained Capers
  • 2 tablespoons Extra Virgin Olive Oil
  • 16 thigh, bone and skin removeds Chicken Thigh

Directions:

  1. Heat 1 tablespoon oil in a large deep skillet over medium-high heat.
  2. Season the chicken lightly with salt and pepper; cook until cooked through, 12-14 minutes per side. Transfer to a plate; cover and keep warm.
  3. Dice the green onions and mince the garlic.  Add  to pan with 1 tbsp oil over medium-high heat.  Cook 5 minutes, until onion is tender. Add diced tomatoes, broth and capers; simmer until slightly thickened, about 8 minutes. Season to taste with salt and freshly ground black pepper.
  4. Return chicken to skillet and coat with sauce before serving.
