Ingredients:
- 1 teaspoon Garlic
- 3 plum tomatoes Red Tomatoes
- 1/2 cup Chicken Broth, Bouillon or Consomme
- 1/4 cup chopped Scallions or Spring Onions
- 2 tablespoons drained Capers
- 2 tablespoons Extra Virgin Olive Oil
- 16 thigh, bone and skin removeds Chicken Thigh
Directions:
- Heat 1 tablespoon oil in a large deep skillet over medium-high heat.
- Season the chicken lightly with salt and pepper; cook until cooked through, 12-14 minutes per side. Transfer to a plate; cover and keep warm.
- Dice the green onions and mince the garlic. Add to pan with 1 tbsp oil over medium-high heat. Cook 5 minutes, until onion is tender. Add diced tomatoes, broth and capers; simmer until slightly thickened, about 8 minutes. Season to taste with salt and freshly ground black pepper.
- Return chicken to skillet and coat with sauce before serving.
