Cauliflower-Pea Pancakes Recipe

1 head, large (6-7" dia) Green Cauliflower
1 small Red Onions
6 large Egg (Whole)
0 1/2 cup Matzo Meal
1 1/2 tsp Salt
0 1/2 tsp Black Pepper
1 cup Cooked Green Peas (from Frozen)
- In a food processor, finely chop cauliflower and onions together. Stir in eggs, matzo meal, salt, pepper and peas. Pulse to combine.
- Heat an ungreased nonstick griddle over medium heat. For each pancake, scoop out ¼ cup batter and flatten with a spatula to a 3 diameter. Cook pancakes 1 to 2 minutes per side, until golden brown
