Ingredients:

  • 1 cup (107g) fresh cauliflower florets
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1/4 cup (28g) shredded Cheddar cheese
  • 1 teaspoon chopped fresh chives (optional)

Directions:

  1. Steam cauliflower in a steamer basket over boiling water in a medium covered sauce pot until tender, about 10 minutes.
  2. Remove to a bowl, add salt and pepper, and mash with a fork. Top with Cheddar cheese and garnish with chives if desired.
