Keto Blender Mayonnaise
Cooking tip: If you’ve tried this sauce and like it, try experimenting with herbs and spices to flavor it your way!

Ingredients:

  • 1/2 cup Extra Virgin Olive Oil
  • 1 large Egg Yolk
  • 2 teaspoons Fresh Lemon Juice
  • 1/2 teaspoon Salt
  • 1/8 teaspoon Black Pepper
  • 1 teaspoon Dijon Mustard

Directions:

Store-bought mayonnaise may be convenient, but it's usually made with soybean oil (high in omega-6s) and often with added sugar. In addition to using mayonnaise in tuna and other salads, it is delicious over steamed vegetables. Use canola oil instead of olive oil, if you prefer. Both are good sources of omega-3s.  Each serving is 2 Tbsp. 
  1. Combine egg, lemon juice, mustard, salt and pepper in a blender and pulse to combine.
  2. With the blender running on low speed, pour in the oil in a thin, steady stream. If the mixture becomes too thick and the oil is no longer incorporating, pulse the blender.
