Beef Sauteed with Vegetables Over Romaine

Ingredients:

  • 15 ounces Tomato Sauce (Canned)
  • 1/4 cup chopped Green Sweet Pepper
  • 6 ounces Cheddar Cheese
  • 1 1/2 pounds Ground Beef (80% Lean / 20% Fat)
  • 1/4 cup chopped Onions
  • 3 teaspoons Sucralose Based Sweetener (Sugar Substitute)
  • 6 cups shredded Cos or Romaine Lettuce
  • 4 tablespoons Tomato Paste

Directions:

  1. In a medium non-stick skillet over medium-high heat, brown ground beef until almost cooked through, about 6 minutes. Add onions and peppers and continue to sauté until meat is cooked through, about 4 minutes more.
  2. Drain off excess fat from the skillet and add tomato sauce, tomato paste and granular sugar substitute and season with salt and freshly ground black pepper. Allow to simmer over low heat for 30 minutes.
  3. Serve immediately over shredded Romaine topped with cheddar. One serving is 1 cup shredded lettuce, a rounded 1/2 cup of cooked meat and vegetables, and 1/4 cup shredded cheddar cheese.
