Keto Bearnaise Sauce
Cooking tip: If you’ve tried this sauce and like it, try experimenting with herbs and spices to flavor it your way!

Ingredients:

  • 2 tablespoons chopped Shallots
  • 5 tablespoons White Wine Vinegar
  • 1/2 teaspoon leaf Tarragon
  • 2 large Egg Yolks
  • 1/8 teaspoon Black Pepper
  • 1/2 cup Unsalted Butter Stick
  • 1/8 teaspoon Salt

Directions:

  1. In a double boiler (or heatproof bowl set over, but not touching, a sauce pot of simmering water), combine shallot, tarragon, and vinegar. Cook 5 minutes, until most of the vinegar has evaporated.
  2. Whisk the vingar and add the egg yolks set over the simmering water.  Whisk continuously until egg yolks have thickened, about 5 minutes. Whisk in butter gradually, piece by piece, until incorporated (sauce should have the texture of mayonnaise).
  3. Remove from heat. Season to taste with salt and pepper.
