Avocado Chocolate Mousse

Ingredients:

  • 1/2 cup Coconut Milk Unsweetened
  • 1/2 cup Sugar Free Chocolate Chips
  • 3 teaspoon (3.5g) truvia
  • 1/8 teaspoon Salt
  • 2 tablespoons Erythritol
  • 3 each California Avocados
  • 2 1/2 tablespoons Cocoa Powder
  • 2 teaspoons Vanilla Extract

Directions:

For this recipe it is important that all ingredients are at room temperature to make the blending smooth and easy.
  1. Mash the avocado and place it in a blender with the coconut milk.  Blend until smooth.
  2. While the avocados are blending, place the chocolate chips in a microwave safe bowl and heat for 20 seconds, stir well, and heat at 10 second intervals until melted, stirring in between.  Once melted add to the avocado mixture and continue to blend while scraping down the sides.
  3. Add the cocoa powder, erythritol, truvia, vanilla, and salt.  Blend and scrape down the sides until all ingredients are well combined and the mousse is smooth and creamy.  Add additional truvia ¼ teaspoon at a time if a sweeter mousse is desired.
Variation: add up to 1 teaspoon cinnamon for a Mexican chocolate flavor.
