Atkins Yorkshire Pudding
Cooking tip: Having a party? When planning your low carb spread, think about which dishes you can make in advance and which need fresh ingredients that day.

Ingredients:

  • 2 ounces Vital Wheat Gluten
  • 3 large Eggs (Whole)
  • 1 teaspoon Baking Powder (Straight Phosphate, Double Acting)
  • 1 teaspoon Salt
  • 1/3 cup Canola Vegetable Oil
  • 1/2 cup Whole Grain Soy Flour
  • 1 cup Whole Milk

Directions:

Yorkshire Pudding is traditionally made with pan drippings from cooking meat.  In this recipe oil is listed instead.  Feel free to use pan drippings for a more flavorful pudding.
  1. Preheat oven to 450° F.
  2. Whisk together soy flour, gluten, eggs, milk and salt.
  3. Pour drippings or oil into an 8-inch square baking dish, and place on center rack in oven for 5 minutes, until drippings or oil is smoking hot. Then add batter and bake 15 minutes.
  4. Lower temperature to 350° F and bake for 15 to 20 minutes more, until lightly browned. Serve piping hot.
