Atkins Favorite Fast Food Burger Salad

Ingredients:

  • 1/2 cup(s) Mayonnaise (Bestfoods)
  • 2 teaspoons Yellow Mustard
  • 16 ounces Ground Beef Round (10% fat)
  • 6 cups Iceberg Lettuce, raw, shredded
  • 2 tablespoons Tap Water
  • 4 tablespoons Yellow Onion (chopped)
  • 10 gram(s) Allulose, liquid
  • 1/2 teaspoon(s) Smoked paprika
  • 4 each Dill or Kosher Pickle Spear
  • 2 tablespoons White Wine Vinegar
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Salt
  • 2 tablespoons Pickle Relish - Sweet, Sugar Free- Mt. Olive
  • 1/4 teaspoon Black Pepper, ground
  • 1/2 teaspoon Onion powder
  • 1 cup(s) Cheddar cheese, shredded (1 cup= 113 g)

Directions:

  1. In a small bowl, whisk together mayonnaise, vinegar, water, relish, mustard, sweetener, smoked paprika, ¼ teaspoon garlic powder, and ¼ teaspoon onion powder until well blended. Set aside to let the flavors blend.
  2. In a 10-inch skillet over medium-high heat, place the brick of ground beef. Cook for 2-3 minutes without stirring to allow it to brown. Flip and cook another 2-3 minutes without stirring to brown. Sprinkle with salt, pepper, ¼ teaspoon garlic powder and ¼ teaspoon onion powder and break into chunks, cooking until no longer pink, another 4 minutes.
  3. Assemble the salads by layering 1 ½ cups shredded iceberg lettuce on the bottom of each bowl. Arrange ¼ cup shredded cheese, one chopped pickle spear, 1 tablespoon diced onion, and 3-ounces cooked ground beef over the lettuce in each bowl. Drizzle each salad with ¼ cup dressing. One salad (as described above) with ¼ cup dressing is one serving.
