Apple Walnut Rotisserie Chicken Salad

Ingredients:

  • 2 cups rotisserie chicken, diced FNDDS
  • 3/4 cup fresh granny smith apple, sliced Canadian Nutrient File
  • 1/3 cup dried english walnuts, halves USDA
  • 1/8 teaspoon table salt USDA
  • 5 drops liquid stevia sweetener FNDDS
  • 1/4 cup fresh celery, diced USDA
  • 1/2 ea fresh butterhead lettuce, head, 5" USDA
  • 2 tablespoons mayonnaise USDA
  • 1 1/2 teaspoons lemon juice FNDDS
  • 1/3 cup fresh scallions, tops & bulb USDA

Directions:

  1. In a large bowl combine diced chicken, chopped apple, chopped walnuts, thinly sliced scallions, and diced celery until evenly distributed.
  2. In a small bowl, whisk together mayonnaise, lemon juice, salt and liquid stevia. Pour over chicken and fold until evenly coated. Taste and add salt and stevia to taste. Chill for 30 minutes to allow flavors to blend.
  3. Divide chicken salad evenly into each of 9 lettuce leaves, about 1/3 cup in each. Three filled lettuce cups is one serving.
