Keto Alfredo Sauce

Ingredients:

  • 1 1/2 cups Heavy Cream
  • 20 grams Romano cheese, grated (1 tbsp= 5 grams; 1 cup= 80 g)
  • 2 tablespoons Unsalted Butter Stick
  • 1/2 cup Parmesan Cheese (Grated)
  • 1/8 teaspoon Black Pepper
  • 1/8 teaspoon Nutmeg (Ground)

Directions:

One of the simplest and best of all pasta sauces, Alfredo sauce is versatile enough to dress up steamed vegetables as well. For the best flavor, buy blocks of Parmesan and Pecorino Romano and grate them yourself.  See a variation below.  Each serving is 1/4 cup. 
  1. Melt butter in a medium saucepan over medium heat. Add cream and simmer until reduced to 1 cup, about 10 minutes.  Grate Parmesan and Romano cheeses.
  2. Remove from heat; stir in Parmesan, Romano, pepper and nutmeg until the cheeses have melted and sauce is smooth. 
  3. Serve immediately.
Vodka Sauce:   Prepare Alfredo Sauce according to directions, adding 3 tablespoons tomato paste and 2 tablespoons vodka to the heavy cream before reducing.
