Zucchini Noodles with Spicy Chicken Sausage Recipe

1 tbsp chopped Onions
1 tsp GARLIC Iberia Foods Corporation
3 each CHERRY TOMATOES Hingenuity, Inc.
1 tablespoon OLIVE OIL Salov North America Corp.
4 oz CHICKEN SAUSAGE Ahold Usa, Inc.
0 1/2 medium Zucchini
- Preheat a non-stick skillet over medium high heat with the olive oil.
- Spirilize the zucchini or use a mandoline to make very thin slices. Alternatively, chop into bite sized pieces (it won't look like noodles but it will taste the same!) Add to the hot skillet, season with salt and freshly ground black pepper and sauté for 1-2 minutes until softened. Remove from pan and set aside in a serving bowl.
- To the same pan add the onions, garlic and tomatoes. Sauté for 1-2 minutes until fragrant then add the chicken sausage breaking it up with a spatula. Cook until the sausage is cooked through; about 5 minutes. Place the sausage mixture over the zucchini noodles and enjoy.
