DIRECTIONS
- Place oven rack 4-inches from heating element and preheat broiler. Lightly oil a baking sheet.
- Place zucchini on baking sheet and carefully fan out slices. Brush with olive oil and sprinkle with salt and pepper. Broil until zucchini is softened, about 5 minutes.
- Remove baking sheet from oven and using the end of a knife to carefully spread out each fan further. Sprinkle with cheese and broil until cheese is lightly browned, about 6 minutes more.
