Ingredients:
- 1/2 teaspoon Dry Mustard
- 1/2 cup Real Mayonnaise
- 1/3 tablespoon Unseasoned Rice Wine Vinegar
- 1 tsp, ground Thyme (Dried)
- 1/4 cup Total 2% Greek Yogurt
- 8 large leaves Boston Lettuces
- 1 dash Salt
- 1/4 cucumber (8-1/4") Cucumber (with Peel)
- 1 tablespoon Parmesan Cheese (Shredded)
- 1 stalk, medium (7-1/2" - 8" long) Celery
- 1 dash Black Pepper
- 1/2 cup chopped Walnuts
- 1/4 medium (2-3/4" diameter) (approx 3 per pound) Apples
- 2 cup, cooked, diceds Chicken Breast
Directions:
- Whisk the first 7 ingredients (yogurt through pepper) together in a medium mixing bowl. Dice the celery, cucumber and apple.
- Fold in the next 5 ingredients (chicken through walnuts). Optional: toast walnuts at 350°F for 5-8 minutes first.
- Place 2 lettuce leaves on each plate and spoon 1/4 of chicken salad into each cup.
- Sprinkle with Parmesan cheese and serve.
