Keto Waldorf Chicken Salad in Lettuce Cups
Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.

Ingredients:

  • 1/2 teaspoon Dry Mustard
  • 1/2 cup Real Mayonnaise
  • 1/3 tablespoon Unseasoned Rice Wine Vinegar
  • 1 tsp, ground Thyme (Dried)
  • 1/4 cup Total 2% Greek Yogurt
  • 8 large leaves Boston Lettuces
  • 1 dash Salt
  • 1/4 cucumber (8-1/4") Cucumber (with Peel)
  • 1 tablespoon Parmesan Cheese (Shredded)
  • 1 stalk, medium (7-1/2" - 8" long) Celery
  • 1 dash Black Pepper
  • 1/2 cup chopped Walnuts
  • 1/4 medium (2-3/4" diameter) (approx 3 per pound) Apples
  • 2 cup, cooked, diceds Chicken Breast

Directions:

  1. Whisk the first 7 ingredients (yogurt through pepper) together in a medium mixing bowl.  Dice the celery, cucumber and apple.   
  2. Fold in the next 5 ingredients (chicken through walnuts).  Optional:  toast walnuts at 350°F for 5-8 minutes first.  
  3. Place 2 lettuce leaves on each plate and spoon 1/4 of chicken salad into each cup.  
  4. Sprinkle with Parmesan cheese and serve.
