Teriyaki Shrimp with Snow Peas and Mixed Green Salad
Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.

Ingredients:

  • 2 cups Earthbound Farm - Mixed Baby Greens
  • 6 ounces Shrimp, raw
  • 1/4 cup Daikon Radish, grated
  • 1 half Avocado, Hass
  • 1/3 tablespoon Sesame Oil
  • 1/4 cup Snow Peas, fresh

Directions:

Use the Atkins recipes to make Teriyaki Glaze and Sherry Vinagrette.
  1. Bring a large pot of salted boiling water to a boil.
  2. Season shrimp with salt and pepper. Heat oil in large skillet over high heat until hot. Saute shrimp until just pink and golden, about 1 minutes per side.
  3. Meanwhile, drop snow peas into boiling water, cook just 20 seconds, drain. Add snow peas and 1 tbsp teriyaki sauce to skillet with shrimp. Mix well and heat until sauce comes to a simmer, about 2 minutes. Finish with sesame oil before serving.
  4. Toss to combine greens, avocado, radish and 2 tbsp dressing. Serve with Teriyaki Shrimp.
