Ingredients:
- 2 cups Earthbound Farm - Mixed Baby Greens
- 6 ounces Shrimp, raw
- 1/4 cup Daikon Radish, grated
- 1 half Avocado, Hass
- 1/3 tablespoon Sesame Oil
- 1/4 cup Snow Peas, fresh
Directions:
Use the Atkins recipes to make Teriyaki Glaze and Sherry Vinagrette.
- Bring a large pot of salted boiling water to a boil.
- Season shrimp with salt and pepper. Heat oil in large skillet over high heat until hot. Saute shrimp until just pink and golden, about 1 minutes per side.
- Meanwhile, drop snow peas into boiling water, cook just 20 seconds, drain. Add snow peas and 1 tbsp teriyaki sauce to skillet with shrimp. Mix well and heat until sauce comes to a simmer, about 2 minutes. Finish with sesame oil before serving.
- Toss to combine greens, avocado, radish and 2 tbsp dressing. Serve with Teriyaki Shrimp.
