Spinach-Cheese Bake

Ingredients:

  • 1 1/2 cups shredded Vermont Sharp-White Cheddar Cheese
  • 3 tablespoons Whole Grain Soy Flour
  • 1/2 teaspoon Black Pepper
  • 2 tablespoons Parsley
  • 1 teaspoon fresh Dill
  • 2 10 oz packages Frozen Chopped Spinach
  • 4 large Scallions or Spring Onions
  • 1 teaspoon Unsalted Butter Stick
  • 3/4 teaspoon Salt
  • 8 ounces Ricotta Cheese (Whole Milk)
  • 4 large Eggs (Whole)

Directions:

  1. Preheat oven to 350°F. Butter an 8 square baking dish and set aside.
  2. In a large bowl, beat eggs, salt and pepper with a fork until combined. Add spinach, ricotta, cheddar, green onions, soy flour, chopped parsley and dill; mix well.
  3. Pour spinach mixture into prepared baking dish. Bake 45 minutes, until center is set and top is golden brown.
  4. Allow dish to rest for 3 minutes before serving.
