Ingredients:
- 1 1/2 cups shredded Vermont Sharp-White Cheddar Cheese
- 3 tablespoons Whole Grain Soy Flour
- 1/2 teaspoon Black Pepper
- 2 tablespoons Parsley
- 1 teaspoon fresh Dill
- 2 10 oz packages Frozen Chopped Spinach
- 4 large Scallions or Spring Onions
- 1 teaspoon Unsalted Butter Stick
- 3/4 teaspoon Salt
- 8 ounces Ricotta Cheese (Whole Milk)
- 4 large Eggs (Whole)
Directions:
- Preheat oven to 350°F. Butter an 8 square baking dish and set aside.
- In a large bowl, beat eggs, salt and pepper with a fork until combined. Add spinach, ricotta, cheddar, green onions, soy flour, chopped parsley and dill; mix well.
- Pour spinach mixture into prepared baking dish. Bake 45 minutes, until center is set and top is golden brown.
- Allow dish to rest for 3 minutes before serving.
