Keto Scrambled Eggs with Goat Cheese and Asparagus Recipe

3 spear, medium (5-1/4" to 7" long) Asparagus
1 1tsp Olive Oil
2 large Egg (Whole)
1 oz Goats Cheese (Hard)
- Place 2 tablespoons of water in a small nonstick skillet over medium-high heat. Add the asparagus and steam until water has evaporated and asparagus is tender. Remove asparagus and keep warm.
- Add teaspoon of virgin olive oil to the skillet over medium heat; add eggs and goat cheese; scramble until eggs are set and cheese is melted.
- Top with the asparagus. Season to taste with salt and freshly ground black pepper and serve immediately.
