Sauteed Soft-Shell Crabs

Ingredients:

  • 1 tablespoon Old Bay Seasoning
  • 1 fruit (2-1/8" diameter) Lemon
  • 1/4 cup Unsalted Butter Stick
  • 1/2 teaspoon Salt
  • 4 tablespoons Canola Vegetable Oil
  • 1/4 teaspoon Black Pepper
  • 8 crabs Blue Crab

Directions:

Use the Atkins recipe for Atkins Flour Mix in this recipe, you will need 1 cup.  The crabs will vary in weight look for anywhere between 2.5-3 oz each crab (about 20-24 ounces total).  Each serving is 2 crabs.
  1. Season crabs with salt and pepper.  Combine baking mix and Old Bay in a shallow bowl or plate; dredge crabs in mixture, shaking off excess.  Set aside.  
  2. Heat 2 tablespoons butter and 2 tablespoons oil in a large skillet over high heat.  Add four crabs; cook until golden, about 3 minutes per side.  Transfer to paper towels to drain.  Repeat with remaining butter, oil and crabs.  Serve right away with lemon wedges.
