Ingredients:

  • 4 ounce raw (yield after cooking) Italian Sausage
  • 2 teaspoons Extra Virgin Olive Oil
  • 3/4 cup chopped Red Sweet Pepper
  • 1 small Onion
  • 2 cups Baby Spinach
  • 8 large Eggs (Whole)
  • 1/4 teaspoon Black Pepper
  • 1 teaspoon Thyme
  • 1/4 teaspoon Salt
  • 1 cup shredded Cheddar Cheese

Directions:

  1. Heat oil in a 10-inch nonstick ovenproof skillet over medium-high heat. Add sausage and sauté until lightly browned, about 3 minutes. Dice the onon and bell pepper and add to the pan; sauté until vegetables are soft, about 5 minutes. Add spinach and sauté until wilted, about 2 minutes. 
  2. Heat broiler to high. Meanwhile, whisk eggs, 1/4 cup water, salt, and black pepper in a medium bowl. Add egg mixture, cheese, and thyme to skillet; cook until eggs are set on bottom but top remains slightly runny, about 5 minutes. 
  3. Transfer skillet to oven and broil until eggs are set and golden, about 2 minutes. Cut into wedges and serve.
