Ingredients:

  • 1 fluid ounce (no ice) Tequila
  • 1 1/2 tablespoons Fresh Lime Juice
  • 1 teaspoon Sweetener
  • 4 ice cubes Tap Water
  • 2 fluid ounces Club Soda

Directions:

Use the Atkins recipe to make Strawberry Rhubarb Sauce for this recipe.  You will need 2 tablespoons for each serving. Truvia is the recommended sweetener (if using sucralose use 4 tsp and add 2g NC to the total).
 
  1. Combine 2 tablespoons of Strawberry Rhubarb Sauce with the lime juice, sugar substitute and tequila in a blender.  Pulse 2-3 times to puree the sauce.  
  2. Add 4 ice cubes to a glass, pour the tequila mixture over the top and add club soda or seltzer.   Or make it frozen by putting all in a blender.
