Pesto Topped Salmon with Caesar Salad
Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.

Ingredients:

  • 6 ounces boneless, raw Salmon
  • 2 cups Romaine, raw, hearts
  • 2 tablespoons Parmesan Cheese (Shredded)

Directions:

Use the Atkins recipe to make Basil Pesto and Caesar Salad Dressing for this recipe.  You will need 2 tablespoons of each.  This recipe is suitable for all phases of the Atkins diet except the first two weeks of Induction due to the nuts in the pesto. 
  1. Preheat grill.  Season salmon with salt and freshly ground black pepper.  Grill, flipping once until it is just slightly pink in the center; about 5 minute per side.
  2. Toss together the lettuce, dressing and cheese.  Plate the salad and serve with the grilled salmon garnished with 2 tablespoons of pesto on top.
