Orange-Spiced Sweet Potato Pancakes

Ingredients:

  • 1/2 teaspoon Cinnamon
  • 1 teaspoon Salt
  • 1/4 cup Canola Vegetable Oil
  • 2 large Eggs (Whole)
  • 3 teaspoons Orange Zest
  • 1 pound Sweet Potato
  • 1 small Onion

Directions:

Use the Atkins recipe to make Atkins Soy-Free Flour Mix; you will need 1/3 cup.
  1. Peel and shred sweet potatoes on a grater. Combine sweet potatoes, diced onion, 1/3 cup flour mix, eggs, orange zest, salt, and cinnamon in a large bowl. 
  2. Heat ¼ cup oil in a large skillet over medium-high heat. Drop 2-tablespoon mounds of sweet potato mixture into pan, flattening slightly; fry in batches until golden brown, about 2 minutes per side. Drain on paper towels and serve hot. Add remaining 2 tablespoons oil after 3 batches. 
  3. This recipe makes about 20 pancakes; each serving is two pancakes.
