Maple Crepes with Whipped Cream
Cooking tip: We love the idea of customizing this recipe to make it your own! If you add any ingredients, just be sure to keep an eye on net carbs.

Ingredients:

  • 1 packet Splenda
  • 3 each Egg
  • 4 fluid ounces Heavy Whipping Cream
  • 1/3 cup Atkins Flour Mix (cups)
  • 1/2 cup (8 fluid ounces) Water, tap
  • 1/4 teaspoon Vanilla Extract
  • 1/4 cup Maple Syrup (sugar-free)

Directions:

Use the Atkins recipe to make Atkins Flour Mix, you will need 1/2 cup. 
  1. In a medium bowl, whisk bake mix, water, eggs and vanilla or maple extract until smooth.
  2. Let batter rest 30 minutes. During this time, whip heavy cream and sugar substitute using an electric mixer on high speed until soft peaks form, about 3 minutes.
  3. Spray an 8-inch nonstick skillet with oil spray and heat over medium-high heat. Using 2-3 tablespoons of batter for each crepe, pour batter into center of skillet and rotate pan to spread batter evenly. Cook 30 to 60 seconds until tiny bubbles appear on the surface.
  4. Flip and cook on other side for an additional 15 to 30 seconds. Repeat with remaining batter, covering with foil to keep warm. Serve crepes with sweetened cream and 2 tablespoons sugar-free pancake syrup per serving.
