Ingredients:
- 1/4 cup cheddar cheese, shredded USDA
- 1/2 teaspoon table salt USDA
- 1 lrg raw egg USDA
- 1/4 cup fresh young green scallions, chopped FNDDS
- 16 sec sprays olive oil cooking spray Pam
- 230 grams fresh zucchini, with skin USDA
- 1/4 cup parmesan cheese, grated USDA
- 1/4 teaspoon black pepper, ground USDA
- 1 bag Atkins Ranch Protein Chips
Directions:
- Use the large holes of a box grater to shred zucchini into a clean kitchen towel, you should have 2 cups. Use the towel to squeeze as much liquid out of the zucchini as possible. Place zucchini in a medium bowl.
- Crush Atkins Ranch Protein Chips and add them to the bowl with the zucchini along with the scallions, cheddar cheese, egg, salt and pepper. Use a fork to mix, until all ingredients are evenly distributed.
- Into a small bowl, measure the grated parmesan cheese. Measure out 1 tablespoon zucchini mixture, shape into a log and roll in the parmesan cheese to coat the exterior. The zucchini logs will be quite loose, but the parmesan crust will help hold them together. Place on a baking sheet, and repeat until all the zucchini mix is used, resulting in 16 zucchini tots. Spray tots with olive oil cooking spray, flip and spray the other side.
- Heat air fryer to 390°F for at least 3 minutes. Place single layer of tots with room between on the frying plate, working in batches if needed. Cook for 3 minutes, then flip each tot and finish cooking for 1 ½ minutes. Allow to cool slightly before serving. Four tots as described is one serving.
