Ingredients:
- 1 cup, cube Eggplant
- 1 small Sweet Red Pepper
- 10 ounces Lamb, Cubed
- 1 medium (2-1/2" diameter) Onions, raw
Directions:
If desired this recipe is delicious if the skewers are brushed with Italian Dressing before grilling and then served with it on the side for dipping.
- Preheat grill and soak two bamboo skewers in warm water for at least 20 minutes.
- Cut vegetables into equal sized pieces about 1-2 inches.
- Alternate the lamb cubes, eggplant, onion and bell pepper on the skewers. Coat lightly with olive oil spray or brush lightly with olive oil. Season with salt and freshly ground pepper.
- Grill, turning 3-4 times until the lamb is cooked to desired doneness and vegetables are tender, about 10 minutes.
