Keto Migas with Nacho Protein Chips

Ingredients:

  • 1/4 cup fresh green bell pepper, chopped USDA
  • 1/2 tablespoon canola oil USDA
  • 3 eas turkey breakfast sausage link FNDDS
  • 1 ounce queso fresco cheese FNDDS
  • 1 bag Atkins Nacho Cheese Protein Chips
  • 3 lrgs raw egg USDA
  • 1/4 teaspoon table salt USDA
  • 1/2 ea fresh avocado USDA
  • 2 tablespoons red salsa FNDDS
  • 3 tablespoons fresh yellow onion, chopped USDA
  • 1 tablespoon sour cream FNDDS
  • 1 tablespoon fresh cilantro, leaves USDA

Directions:

  1. In a medium non-stick skillet over medium heat, warm canola oil. Add bell peppers, onions, and chopped precooked sausage, and sauté until onions are translucent, 3-4 minutes.
  2. In a small bowl, use a fork to whisk together eggs and salt. Pour into the skillet with the vegetables and start to scramble the eggs. Add half the bag of Atkins Nacho Cheese Protein Chips and fold the egg mixture together until eggs are fully scrambled, about 2 minutes more. 
  3. Remove from heat and fold in remaining chips. Top with crumbled queso fresco, salsa, sliced avocado, sour cream, and cilantro and serve immediately.
