INGREDIENTS
- 3 large Scallions or Spring Onions
- 1 pepper Jalapeno Peppers
- 1 medium whole (2-3/5" dia) Red Tomatoes
- 2 each California Avocados
- 1/2 fl oz Fresh Lime Juice
- 1/8 cup Cilantro (Coriander)
- 1/8 tsp Salt
DIRECTIONS
- Dice the onions, pepper and tomato and place them in a medium bowl.
- Slice avocados in half lengthwise, remove pits and scoop pulp into bowl with a spoon then mash with a fork.
- Add the diced onions, pepper, and tomato mixing to combine and then mix in lime juice and cilantro. Add salt to taste.
Cooking Tip
For an extra kick, add another half of a jalapeno!
