Grilled Leeks with Lemon Vinaigrette

Ingredients:

  • 1 1/4 pounds Leeks
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Rosemary

Directions:

Use the Atkins recipe to make Lemon Vinaigrette; you will need 4 tablespoons. 
  1. Prepare a hot grill. Brush the leeks with the oil and sprinkle with rosemary and salt and pepper to taste. Grill directly on the rack or place in a grill basket and cook, turning occasionally until the leeks are very tender--10 to 15 minutes, depending on their thickness. 
  2. Transfer to a serving platter and drizzle with 1/4 cup Lemon Vinaigrette or to taste.
