  • 3 lb Pork Loin (Tenderloin)
  • 1 3/4 tsp Salt
  • 1 tsp Black Pepper
  • 5 tablespoon Extra Virgin Olive Oil
  • 5 1/3 tbsp Sugar Free Orange Marmalade
  • 5 1/3 tbsp Sugar Free Apricot Preserves
  • 1/2 tsp Cinnamon
  • 1/2 tbsp Balsamic Vinegar
  • 6 cup Spring Mix Salad


  1. Preheat oven to 400°F. Season tenderloins with 1 1/4 teaspoon salt and 1/2 teaspoon pepper. In a large skillet over medium-high high, heat 3 tablespoons of the oil. Brown pork for about 15 minutes, turning as needed. Transfer to a rimmed baking sheet lined with aluminum foil and place in oven. Roast pork for 15 minutes.
  2. Meanwhile, in a small bowl whisk together orange marmalade, apricot jam and cinnamon. Transfer 1 tablespoon of the jam mixture to a large bowl and set aside.
  3. After the pork has roasted for 20 minutes, brush pork generously with jam mixture, allowing any excess to drip onto the pan. Turn oven up to 450°F and roast for another 5 minutes more or until just cooked through and a meat thermometer registers 160°F. Transfer to a cutting board and let pork stand for 5 minutes before cutting into 1-inch slices on the bias.
  4. To make the dressing, mix the reserved jam mixture with the vinegar, and remaining salt and pepper. Slowly whisk in the remaining oil. Add greens and toss to coat. Divide greens on 6 plates and top with pork slices and any accumulated juices and jam from the pan.
