4 medium slice (yield after cooking) Bacon

4 cup fresh broccoli

1 cup chopped Celery

0 3/4 cup mayonnaise, real

2 tsp Vinegar (Cider)

2 teaspoon Sucralose Based Sweetener (Sugar Substitute)
DIRECTIONS
- Cook bacon until crisp. Drain on paper towels then chop.
- In a medium bowl combine the broccoli florets, diced celery and bacon. Set aside. (Note: if the taste of fresh broccoli is too strong for your liking, try boiling it in water for 30-60 seconds then quickly immersing in ice water. Be sure to towel dry the broccoli completely before use or the salad will be too watery).
- In a small bowl whisk together the mayonnaise ( 3/4 cup), cider vinegar and granular sugar substitute. Add to broccoli mixture and toss with spoons until thoroughly coated.
- Serve immediately or refrigerate for up to 2 days.
Cooking Tip
Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.
