Eggs with Cheddar, Asparagus, Salsa and Sour Cream

Ingredients:

  • 1 teaspoon Olive Oil
  • 2 large Eggs (Whole)
  • 4 spear, medium (5-1/4" to 7" long) Asparagus
  • 1 tablespoon Sour Cream (Cultured)
  • 1/4 cup shredded Cheddar Cheese

Directions:

Use the Atkins recipe to make Salsa Cruda or use 2 tablespoons of a no-sugar-added salsa of your choice.
  1. Steam asparagus in skillet for 3 minutes with 2 Tbsp water. Drain and chop.
  2. Beat eggs and add to skillet with 1 tsp oil over medium heat. Add asparagus and cheddar and scramble with eggs till set.  
  3. Top with salsa and sour cream. Alternatively, scramble the eggs with the cheddar, sour cream and salsa then top with full stalks of asparagus for a festive occasion.
