Eggs with Avocado and Salsa with Cantaloupe and Sausage

Ingredients:

  • 4 ounces Turkey Sausage
  • 1/2 fruit without skin and seed California Avocados
  • 1 wedge, large (1/8 of large melon) Cantaloupe Melons
  • 2 large Eggs (Whole)

Directions:

Use the Atkins recipe to make Salsa Cruda or use 2 tabelspoons of a no-sugar-added salsa of your choice. 
  1. Cook sausage in a medium skillet over high heat for about 5 minutes until cooked through and nicely browned on all sides.
  2. Fry eggs (scramble or poach if desired instead).
  3. Layer avocado then eggs then top with salsa.
  4. Cut cantaloupe and serve with turkey sausage and eggs.
