Cucumber, Tomato and Green Onion Salad
Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.

Ingredients:

  • 4 tablespoons Peppermint (Mint)
  • 4 medium (4-1/8" long) Scallions or Spring Onions
  • 2 cucumber (8-1/4") Cucumber (with Peel)
  • 1 tablespoon Sucralose Based Sweetener (Sugar Substitute)
  • 2 tablespoons Extra Virgin Olive Oil
  • 3 tablespoons Red Wine Vinegar
  • 2 medium whole (2-3/5" diameter) Red Tomatoes
  • 1/2 teaspoon Salt

Directions:

  1. In a large bowl combine diced cucumber, vinegar, sugar substitute and salt. Marinate for 30 minutes.
  2. Add diced tomatoes, chopped green onions, julienned mint and olive oil. Gently mix to combine and season to taste with additional salt and pepper.
