Ingredients:
- 4 tablespoons Peppermint (Mint)
- 4 medium (4-1/8" long) Scallions or Spring Onions
- 2 cucumber (8-1/4") Cucumber (with Peel)
- 1 tablespoon Sucralose Based Sweetener (Sugar Substitute)
- 2 tablespoons Extra Virgin Olive Oil
- 3 tablespoons Red Wine Vinegar
- 2 medium whole (2-3/5" diameter) Red Tomatoes
- 1/2 teaspoon Salt
Directions:
- In a large bowl combine diced cucumber, vinegar, sugar substitute and salt. Marinate for 30 minutes.
- Add diced tomatoes, chopped green onions, julienned mint and olive oil. Gently mix to combine and season to taste with additional salt and pepper.
