Ingredients:

  • 1 medium cucumber (201g), diced
  • 1 large red tomato (182g), diced
  • 2 ounces pitted kalamata olives, sliced
  • 1/4 medium red onion (28g), diced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup fresh peppermint (mint), thinly sliced
  • 6 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • 1 teaspoon sucralose based sweetener (sugar substitute)

Directions:

  1. In a large bowl combine cucumber, tomato, olives, and onion. Set aside.
  2. Combine the feta cheese, julienned mint, olive oil, vinegar and sugar substitute in a blender and blend until thoroughly combined. If the dressing is too thick add a little water till desired consistency. Season dressing with salt and freshly ground black pepper.
  3. Arrange salad on 4 serving plates and pour dressing on top. Serve immediately
