Coconut Vanilla Energy Bites

Ingredients:

  • 4 1/2 tablespoons Shredded Coconut Unsweetened (Bob's Red Mill)
  • 1 tablespoon Maple Syrup (sugar-free)
  • 1 tablespoon almond flour, super finely ground, gluten free King Arthur Flour
  • 1 teaspoon Flax Seed Meal
  • 4 teaspoons tap water FNDDS
  • 1 teaspoon Vanilla Whey Protein (no sugar added)
  • 1/2 bar Atkins Vanilla Caramel Pretzel Bar

Directions:

  1. In a small bowl, combine 4 tablespoons coconut shreds, almond flour, protein powder, and flax meal until evenly combined. Add in water and syrup, stirring to form a paste. Finely dice the Atkins Vanilla Caramel Pretzel Bar and fold into the mix.
  2. Use a rounded tablespoon full to form 4 even balls (about 22 grams each), refrigerate for at least an hour to allow them to solidify a bit, then roll in ½ tablespoon coconut shreds to coat. Store in an airtight container in the refrigerator for up to 5 days. Two bites are one serving.
