Keto Cinnamon Flan Cups

Ingredients:

  • 3 tablespoons Maple Syrup (sugar-free)
  • 1/2 teaspoon Cinnamon
  • 2 large Eggs
  • 1 cup Heavy Cream
  • 2/3 cup (8 fluid ounces) Water, tap

Directions:

  1. Preheat oven to 325°F.
  2. Whisk eggs in a large bowl.
  3. In a small saucepan, bring cream, water, pancake syrup and cinnamon to a boil. Gradually whisk cream mixture into eggs and return to saucepan.
  4. Pour mixture through a strainer into four 6-ounce ramekins or custard cups. Place cups in a large roasting pan; carefully pour enough boiling water into pan to reach halfway up sides of cups.
  5. Cover entire pan with foil and bake 35 minutes, until custards are set in centers. Remove from oven and allow to stand in the pan for 15 minutes.
  6. Remove cups from the pan and refrigerate, covered with plastic wrap, for 2 hours before serving.
