DIRECTIONS
Use the Atkins recipe to make Atkins Soy-Free Flour Mix for this recipe. You will need 1 cup.
- Place baking mix, butter, and garlic powder in a food processor. Process until mixture resembles coarse crumbs. Add cheeses and eggs. Pulse just until dough comes together.
- Transfer dough onto a large piece of parchment paper. Lightly form into a flat round. Place second piece of parchment over dough. Press or roll dough to a 6 x 12 rectangle, about 1/2 thick. Place in a resealable bag and refrigerate until very firm, at least 2 hours (or overnight).
- Heat oven to 375°F.
- Place dough horizontally on countertop. Remove top sheet of parchment from dough. Sprinkle with garlic salt; gently press into dough. With a sharp knife cut dough into forty 6-inch long strips. Transfer strips to an ungreased baking sheet. Bake 11-13 minutes until lightly browned, watching closely in the last 5 minutes for burning. Slide straws onto a cooling rack. When cool, store in an airtight container. 3 sticks equals one serving.
