Cauliflower with Red Pepper and Black Olives
Cooking tip: This is a great side dish to pair with a main protein.  Try it with grilled lamb for a Mediterranean dish.

Ingredients:

  • 10 each Kalamata Olives
  • 2 tablespoons Parsley
  • 1 head large (6-7" diameter) Cauliflower
  • 4 ounces Roasted Bell Peppers
  • 2 tablespoons Extra Virgin Olive Oil

Directions:

  1. Place cauliflower in a medium pot fitted with a steamer basket over lightly salted water. Bring to a boil. Steam 6-7 minutes until tender but firm.
  2. Dice bell pepper, slice the olives and coarsely chop the parsley.
  3. Drain cauliflower. Mix in bell pepper, olives, olive oil and parsley. Season to taste with salt and freshly ground black pepper.
