Cooking tip: This is a great side dish to pair with a main protein. Try it with grilled lamb for a Mediterranean dish.
Ingredients:
- 10 each Kalamata Olives
- 2 tablespoons Parsley
- 1 head large (6-7" diameter) Cauliflower
- 4 ounces Roasted Bell Peppers
- 2 tablespoons Extra Virgin Olive Oil
Directions:
- Place cauliflower in a medium pot fitted with a steamer basket over lightly salted water. Bring to a boil. Steam 6-7 minutes until tender but firm.
- Dice bell pepper, slice the olives and coarsely chop the parsley.
- Drain cauliflower. Mix in bell pepper, olives, olive oil and parsley. Season to taste with salt and freshly ground black pepper.
