Broccoli Purée with Garlic Brown Butter
Cooking tip: Having a party? When planning your low carb spread, think about which dishes you can make in advance and which need fresh ingredients that day.

Ingredients:

  • 1 fluid ounce Water
  • 1/8 teaspoon Black Pepper
  • 2 cloves Garlic
  • 1/8 teaspoon Salt
  • 4 tablespoons Cream, heavy, liquid
  • 1/4 cup shredded Cheddar Cheese
  • 1/4 cup Unsalted Butter Stick
  • 1 pound Broccoli Flower Clusters

Directions:

  1. Bring a medium pot of salted water to a boil over high heat. Add the broccoli, reduce heat to medium-low and simmer until crisp-tender, about 5 minutes. Drain and transfer to food processor or blender.
  2. Meanwhile, melt the butter in a small skillet over medium-high heat. Minced the garlic and in the butter sauté until both are golden brown, about 2 minutes. Stir in the cream and water; transfer to a food processor with the broccoli and purée. Season with salt and pepper.
  3. Serve hot topped with shredded cheese. Try this flavorful purée as a nice change from mashed cauliflower or steamed broccoli.
