INGREDIENTS

  • 1/4 cup Extra Virgin Olive Oil
  • 1 medium (2-1/2" dia) Onions
  • 1/2 stalk, medium (7-1/2" - 8" long) Celery
  • 2 clove Garlic
  • 1 tsp, leaves Basil (Dried)
  • 28 oz Crushed Tomatoes (Canned)

DIRECTIONS

This versatile sauce is great not just with meatballs or on a low-carb or shirataki pasta, but also on sautéed zucchini, onions or peppers.  Each serving is 1/2 cup.

  1. Heat oil in a medium saucepan over medium heat. Dice the white onion, celery and garlic; add to pan and saute until the vegetables are very soft, about 6 minutes. Add basil and cook, stirring, 30 seconds.

  2. Stir in tomatoes. Bring to a boil; reduce heat to medium-low and simmer, partially covered, until thickened, about 30 minutes. Season with salt and pepper. Serve hot

Cooking Tip

Make it extra chunky by stirring in a little extra fresh diced tomato. Just be sure to add in the extra net carbs.
