Baked Red Bell Peppers Filled with Cherry Tomatoes and Feta Recipe

2 oz FETA CHEESE
0 1/2 tsp, ground Thyme (Dried)
8 oz CHERRY TOMATOES
2 medium (approx 2-3/4" long, 2-1/2" dia) SWEET RED PEPPERS
2 tbsp BASIL
1 tablespoon EXTRA VIRGIN OLIVE OIL
- Preheat oven to 400°F.
- Cut peppers in half lengthwise. Remove stems, ribs and seeds.
- Gently combine feta, tomatoes, thyme and basil. Fill pepper halves with the mixture.
- Place in a baking dish and drizzle with olive oil.
- Bake, covered with aluminum foil, for 30 minutes. Remove foil and bake an additional 15 minutes until the tomatoes burst and cheese is golden-brown.
