Atkins Yorkshire Pudding Recipe

0 1/2 cup Whole Grain Soy Flour
2 oz Vital Wheat Gluten
3 large Egg (Whole)
1 cup Whole Milk
1 tsp Salt
0 1/3 cup Canola Vegetable Oil
1 tsp Baking Powder (Straight Phosphate, Double Acting)
DIRECTIONSYorkshire Pudding is traditionally made with pan drippings from cooking meat. In this recipe oil is listed instead. Feel free to use pan drippings for a more flavorful pudding.
- Preheat oven to 450° F.
- Whisk together soy flour, gluten, eggs, milk and salt.
- Pour drippings or oil into an 8-inch square baking dish, and place on center rack in oven for 5 minutes, until drippings or oil is smoking hot. Then add batter and bake 15 minutes.
- Lower temperature to 350° F and bake for 15 to 20 minutes more, until lightly browned. Serve piping hot.
