INGREDIENTS

  • 2 medium Zucchini
  • 2 tablespoon Extra Virgin Olive Oil
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 2 tbsp Parmesan Cheese (Grated)

DIRECTIONS

  1. Cut zucchini into very thin1/6-inch slices (on a diagonal if they're small). Brush both sides with extra-virgin olive oil and season with salt, pepper and Parmesan (add whatever else strikes your fancy - garlic powder, Italian seasoning, rosemary or dill). The nutritionals include 2 tablespoons of Parmesan.
  2. Set on a baking sheet in a single layer and bake in a preheated 250°F oven for 1-1.5 hours, turning once. Cool on a wire rack.  Alternatively they can be dehydrated for 6-8 hours.

Cooking Tip

After cutting the zucchini, remove excess moisture by placing slices on a paper towel and sprinkling the salt over them.  Allow to sit for up to 30 minutes then prepare as usual.
