Wilted Mixed Greens with Citrus Dressing
Cooking tip: This recipe could also be used as a dipping sauce!

Ingredients:

  • 2 tablespoons Extra Virgin Olive Oil
  • 3/4 fluid ounce Orange Juice
  • 1 teaspoon Orange Peel
  • 8 thick slice (yield after cooking) Bacon
  • 3 teaspoons Fresh Lemon Juice
  • 1 small Onion
  • 12 cup, shredded or choppeds Mixed Salad Greens
  • 1 medium (2-3/4" dia) (approx 3 per lb) Apple
  • 1 teaspoon Lemon Peel
  • 2 teaspoons Sucralose Based Sweetener (Sugar Substitute)

Directions:

  1. In a large skillet over medium-high heat, cook bacon 7 minutes, until brown and crisp. Drain bacon on paper towels; crumble and reserve. Pour bacon fat into a measuring cup and add as much olive oil as needed (about 2 tablespoons) to make 1/2 cup. Pour mixture back into skillet.  Slice apples and onions.  Juice and zest the lemon and orange.
  2. Add sliced apples and sliced white onion to skillet. Cook until apple is fork tender, about 7 minutes. Stir in sugar substitute, lemon and orange juices and rinds. Mix well; heat 30 seconds.
  3. Pour dressing over greens; add crumbled bacon. Toss until greens are well coated and wilted. Serve warm.
