White Gazpacho

Ingredients:

  • 2 tablespoons White Wine Vinegar
  • 2 large Scallions or Spring Onions
  • 1 medium (approx 2-3/4" long, 2-1/2" diameter) Green Sweet Pepper
  • 1/4 cup Extra Virgin Olive Oil
  • 1/4 cup, whole Almonds
  • 1/2 teaspoon Original Pepper Sauce
  • 4 cups Tap Water
  • 2 cucumber (8-1/4") Cucumber (with Peel)
  • 1 teaspoon Sucralose Based Sweetener (Sugar Substitute)

Directions:

Use the Atkins recipe to make Atkins Cuisine Bread.
  1. Place bread in a bowl; cover with water and soak 5 minutes, until softened. Squeeze excess water from bread and place bread in a food processor or blender. Add almonds, pepper, cucumber and green onions, process in pulses until fairly smooth.
  2. Add vinegar, Tabasco, sugar substitute and olive oil. Process until smooth. Slowly add ice water; process in pulses until smooth.
  3. Pour into a pitcher or bowl. Season to taste with salt and pepper. Chill 1 hour for flavors to blend.
