Ingredients:
- 2/3 tablespoon Extra Virgin Olive Oil
- 1 teaspoon Fresh Lime Juice
- 1 tablespoon Peppermint (Mint)
- 1 large (8-1/4" long) Cucumber (Peeled)
- 4 ounces Feta Cheese
- 1 cup diced Watermelon
Directions:
- Dice the watermelon, cucumber and feta cheese. Combine them together in a medium bowl with 1 tbsp chopped mint.
- Add oil and lime juice, tossing gently to combine and serve right away.
