INGREDIENTS

  • 1 large (8-1/4" long) Cucumber (Peeled)
  • 1 tbsp Peppermint (Mint)
  • 1 tsp Fresh Lime Juice
  • 4 oz FETA CHEESE
  • 1 cup, diced WATERMELON
  • 0 2/3 tablespoon EXTRA VIRGIN OLIVE OIL

DIRECTIONS

  1. Dice the watermelon, cucumber and feta cheese.  Combine them together  in a medium bowl with 1 tbsp chopped mint. 
  2. Add oil and lime juice, tossing gently to combine and serve right away.

Cooking Tip

Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.
