INGREDIENTS

  • 1 cup diced Watermelon
  • 1 large (8-1/4" long) Cucumber (Peeled)
  • 4 oz Feta Cheese
  • 1 tbsps Peppermint (Mint)
  • 0.67 tbsp Extra Virgin Olive Oil
  • 1 tsp Fresh Lime Juice

DIRECTIONS

  1. Dice the watermelon, cucumber and feta cheese.  Combine them together  in a medium bowl with 1 tbsp chopped mint. 
  2. Add oil and lime juice, tossing gently to combine and serve right away.
