Warm Lentils and Celery

Ingredients:

  • 5 stalk, medium (7-1/2" - 8" long) Celery
  • 2 tablespoons Unsalted Butter Stick
  • 1 tablespoon Fresh Lemon Juice
  • 1 cup Cooked Lentils
  • 1/2 teaspoon Garlic
  • 1/4 cup Parsley
  • 1 teaspoon Dijon Mustard

Directions:

  1. Heat butter in a large saucepan over medium-heat.
  2. Add diced celery and saute until softened, about 5 minutes. Add garlic and sauté until aroma is released, about 30 seconds.
  3. Add lentils and lemon juice and cook to heat through, about 3 minutes. Stir in parsley, mustard and salt and pepper to taste.
